Directions:

  1. Prepare the Cake:
    • Preheat the oven to 200C/180C fan/gas 6.
    • Butter and line a 23 x 32cm Swiss roll tin with baking parchment.
    • Whisk the eggs and sugar together for about 8 minutes until the mixture is pale, thick, and doubled in volume.
    • In a separate bowl, combine the flour, cocoa powder, and baking powder. Sift this mixture over the egg mixture and gently fold in using a spatula, ensuring no lumps remain.
