Easy Yule Log Recipe

Ingredients:

  • For the Cake:
    • 3 eggs
    • 85g golden caster sugar
    • 85g plain flour (minus 2 tbsp)
    • 2 tbsp cocoa powder
    • ½ tsp baking powder
  • For the Filling & Icing:
    • 50g butter, plus extra for greasing
    • 140g dark chocolate, broken into pieces
    • 1 tbsp golden syrup
    • 284ml double cream
    • 200g icing sugar, sifted
    • 2-3 extra strong mints, crushed (optional)
    • Holly sprigs and icing sugar for decoration (remove berries)

Directions:

  1. Prepare the Cake:
    • Preheat oven to 200C/180C fan/gas 6.
    • Butter and line a 23 x 32cm Swiss roll tin with baking parchment.
    • Whisk eggs and sugar for 8 mins until creamy.
    • Combine flour, cocoa, and baking powder; sift onto egg mixture. Fold in gently.
    • Pour into tin, spread evenly, and bake for 10 mins.
  2. Roll and Cool:
    • Place baking parchment on a surface.
    • Tip hot cake onto parchment, remove lining and roll from the longest edge with the parchment inside. Let cool.
  3. Prepare Icing:
    • Melt butter and chocolate over hot water. Stir in golden syrup and 5 tbsp cream.
    • Beat in icing sugar until smooth.
  4. Assemble the Log:
    • Whisk the remaining cream until firm.
    • Unroll the cake, spread cream, sprinkle mints (if used), and roll back up.
    • Cut a diagonal slice from one end and attach it to the side of the log.
  5. Decorate:
    • Cover the log with icing, creating a bark texture with a fork.
    • Dust with icing sugar and decorate with holly.
    • Use your creativity with leaves, berries, and pine cones.
